When Life Gives You Lemons Bake a Cake

Everyone is worried about Lemonade as if there aren’t better things to do with lemons. No shade to Bey but LemonCake just sounds better. What is great about this cake is that it’s not just limited to dessert. You can slightly destroy your diet first thing in the morning with a slice for breakfast. Lemon cake and a hot cup of tea or coffee could possibly be the best part of your morning.

So there’s a word in the title that may have stood out a tad bit. Pudding! Yes, Lemon PUDDING Cake. If you’ve notice pudding made an introduction into box cake when some genius discovered how much more it enhances the cake eating experience. Because eating cake should really be an experience. Do you how many people spend hundreds and sometimes thousands to host events just to celebrate awesome cake? I believe they’re called weddings and I’m always happy to bring the baker a gift. What pudding does to a basic cake recipe is add moisture and changes it’s texture slightly. Nothing you won’t love so let us get into cakemation (formation +cake).

Lemon Pudding Cake Recipe

Ingredients

3 cups of flour
2 cups of sugar
1 cup of butter
3 eggs
1 tsp vanilla extract
1 tsp lemon juice
1/2 cup of evaporated milk
1 cup of water
1 packet of instant lemon pudding mix
1/2 tbsp baking powder
1/2 tbsp baking soda

  1. Preheat oven to 350 + Butter Loaf Pan
  2. Mix flour, baking powder, baking soda
  3. In another bowl cream butter and sugar
  4. Mix flour mixture, creamed butter/sugar, cream, and water until smooth
  5. Slowing mix in eggs one at a time
  6. Add vanilla extract, lemon juice & instant lemon pudding mix

Bake for 30 minutes on 350 and check cake every 5 minutes after until center is cooked and cake is brown. Adding pudding means that the lemon cake takes slightly longer to bake so checking the center with a toothpick is necessary.
